Fall Comfort Food

Macaroni and cheese is one of my all time favorite foods. I haven’t made it yet since the weather has cooled down, but that doesn’t mean I haven’t been dreaming of it! So today when browsing through Pinterest, I found a mac and cheese recipe with butternut squash and bacon – oh my god, I had to share!

Most of the time when I make mac and cheese, that’s our main dish. But this recipe looks a little bit heavier than most, so I think it would be a great side dish with a light chicken or fish recipe – or even this Autumn Chopped Salad I also found while food searching.

All I know is that butternut squash plus bacon plus bread plus macaroni and cheese sounds like heavenly comfort food. I’ll probably have a fat attack after, but sometimes those are good for you, right?!

Recipe Radar: Brie!

As far as cheese goes, it seems like most people are either die-hard cheese fans or die-hard cheese haters. Personally, I’m a die-hard cheese lover. It used to be only about certain cheeses, and while I have my top favorites, I’m not as big of a discriminator as I used to be.

One of my absolute favorite cheese is brie cheese. Warm, cold, with fruit, veggies, meat, crackers – I’ll take it whichever way I can get it. And while that’s usually by throwing a small piece in the toaster for a few minutes and topping it with roasted garlic or some sort of jam, I thought I’d broaden my horizons and try some different approaches. Which leads us to today’s recipes to keep on your radar – anything and everything brie!

1 – Brie Cheese and Strawberry Puff Pastry “Ravioli”
2 – Brie and Grape Tart
3 - Pears and Camembert [or Brie, of course!]
4 – Ham, Brie and Apple Paninis
5 – Bite-Sized Baked Brie
